With the 4th of July just around the corner, we’re sharing one of our favorite summer side dishes—Smoked Potato Salad! This potato salad combines gold potatoes, smoked eggs, a creamy dressing, and fresh herbs for a delicious, flavorful side dish that’s perfect for parties and potlucks. The smoky flavor pairs wonderfully with BBQ and grilled dishes!
How to Make Smoked Potato Salad

Salad:
- 2.5 pounds gold potatoes
- 1 tbsp oil
- 1 tbsp Prime Time Spices Magic Dragon Seasoning
- 3-4 large eggs
- Ice bath, for chilling eggs after cooking
- ¼ cup sweet onion, diced
- 2 tbsp chives, chopped, plus extra for garnish (optional)
- 2 tbsp fresh dill, chopped, plus extra for garnish (optional)
- Paprika, for garnish (optional)
Dressing:
- 1 cup Kewpie (or regular) mayonnaise
- ½ cup sweet pickle relish, or diced sweet pickles
- 1 tbsp yellow mustard
- 2 tsp apple cider vinegar
- 2 tbsp Prime Time Spices Magic Dragon Seasoning
Directions
1. Bring a pot of water to a boil. Gently lower the eggs in with a slotted spoon. Boil for 30 seconds, then reduce heat to low, cover, and simmer for 10–11 minutes. Immediately transfer eggs to an ice bath for 15 minutes. Peel and rinse to remove shell fragments.
2. Preheat smoker to 180° F.
3. Peel potatoes, if desired, or leave the skin on. Cut potatoes into ¾ inch chunks. If you have time, soak potatoes in cold water for 20 minutes to an hour. This removes excess starch and helps the potatoes hold their shape better after smoking. Drain and dry completely.
4. Place potatoes in a foil pan. Add oil and 1 tbsp Magic Dragon Seasoning. Mix until evenly coated.
5. Once smoker is up to temp, set the pan of potatoes inside. Place the peeled eggs directly on the grill grates. Close the lid and smoke for 30 minutes, then remove eggs and refrigerate to cool.
6. Raise the temperature of the smoker to 250° F and smoke the potatoes for an additional 2 hours with the lid closed.
7. Remove the potatoes from the smoker. Let cool for 30 minutes.
8. In the meantime, dice the eggs, then set aside.
9. Mix the mayonnaise, pickle relish, mustard, apple cider vinegar, and 2 tbsp Magic Dragon Seasoning in a small bowl until combined.
10. Once the potatoes have cooled, place them in a large bowl. Pour the dressing on top and mix gently until potatoes are evenly coated. Stir in the eggs, sweet onion, chives, and dill. Garnish with additional chives, dill, and paprika if desired. Enjoy!
